Help!!


Since the first wave a nausea hit me with this pregnancy I have yet to really cook a meal. I don't really feel guilty about it, because if I try it usually ends up as a horrible night for the whole family. I do, however, think that I might be able to do something in the morning while I'm feeling my best. I have another friend that is pregnant and she is posting something similar on her blog, so the nutrition of two families rely on your help. So I'm calling out for any good slow cook recipe that you've had success with. The numbers on this blog tell me that I should get some comments. I'm hoping for a lot. I don't care if we're friends or not. I would love to get a recipe from someone I don't know too. A simple cut and paste or a link to another site would be very appreciative. Thanks!!

  1. Okay, I've got a few for you... I don't know if you'll like them or not, cause I know pregnancy makes for picky eating, but here are my 3 all time favorites.

    1. Easiest Slow Roasted Pork

    - 1-2 pounds of pork loin (shaped in a big tube roll thing)
    - 1 bottle of KC Masterpiece Spiced Caribbean Jerk Marinade (16 oz).

    Put in the pork loin, pour marinade on top, and cook all day. At then end, just get two forks and shred the meat, stir it up, and I usually cook it for another 1/2 or so to really soak up the juices.
    Yummy over rice or in rolls for pulled pork sandwiches. So yummy!

    2. Roast
    -1 lb medium red potatoes, cut into fourths
    -1 cup baby carrots
    -3 TB dijon mustard
    -2 TB fresh or 1 1/2 tsp dried rosemary
    -1 tsp fresh or 1/2 tsp dried thyme
    -1 tsp salt
    -1/2 tsp pepper
    -2-3 lb boneless beef chuck roast
    -1 small onion, finely chopped
    -1 1/2 cups beef broth

    Put roast in. Mix mustard, thyme, rosemary, salt, and pepper and spread over the roast. Layer potatoes and carrots around the edges. Sprinkle onions on top and pour broth over everything. Cook on low 8-9 hours.
    I love this one because it's the complete meal - starch, meat, and veggies. Perfect for Sunday dinner.

    3. White Chicken Chili
    -1 1/4 lbs boneless chicken thighs
    -2 cans great northern beans, rinsed and drained
    -1 can hominy rinsed and drained (or if you don't like hominy, just add another can of great northern beans - this is what we do)
    -1 envelope taco seasoning
    -1 can (4.5 oz) chopped green chilis
    -1 can cream of mushroom soup
    -sour cream

    Put chicken in slow cooker and top with all the ingredients except the sour cream. Cook on low for 8-10 hours. Before serving, stir to break up chicken into pieces. Top with sour cream. (I usually make this with chicken breasts instead of thighs, but make sure you also add a soup can or two of water at the beginning if you do this. I guess thighs are more juicy or something, so you don't have to do this with them..)

  2. I totally know how you feel Andy...if that makes you feel any better...maybe not!!! Anyway, the whole slow cooker idea is a really good one! I haven't cooked a real meal for a LONG time! Last night's dinner here was a salad from Rumbi...sad!

    The slow cooker recipe that comes to mind for me is the cafe rio chicken and pork recipes. You can make a salad, or tacos out of the meat...whatever you want! The recipes are:

    PORK (you can half this recipe)

    3 lbs pork roast
    16 oz chunky salsa
    1 can coke
    2 cups brown sugar

    place pork in crock pot and fill half way up the side of the pork with water. cook on hight for 4 hours. drain water. cut prok in theirds, then mix sauce (coke, brown sugar, and salsa) and pour on top. cook 4 more hours on low. shred pork. mix back in with sauce if you want it saucy or not.

    CHICKEN (you can half this recipe too)

    1 small bottle of kraft zesty italian dressing
    1 T. chili powder
    1 T. cumin
    3 cloves garlic (minced)
    5 lbs chicken breasts

    cook all together in a crockpot for 4 hours on high, shred, then cook for an additional 1 hour

    These are easy and yummy recipes I think!

  3. Yay, I'm glad you're doing it too. I am totally going to come to your comments and take all the ideas given to you. =)

    I do have one warning since you are still in the icky sicky stage. The smell of food cooking all day can be a nightmare! When I was in the first trimester I would have to put my crock pot in the laundry room, shut the door, and crack the window so the smell in the house wasn't as overpowering.

    Anyway, here is another of our families crock pot favorite:

    Chicken Tortilla soup

    * 3 Chicken breasts
    * 1 can (4oz) chopped mild green chilies, drained
    * 2 Cans (15 oz each) diced tomatoes, undrained
    * 1 cup chicken broth
    * 1 tsp ground cumin
    * Salt and pepper to taste

    Garnish: Chopped cilantro, shredded cheese, diced avocado and fried tortilla strips. (fry them in vegetable oil)

    DIRECTIONS:

    1. Place chicken in crock pot
    2. Combine chilies, onion, tomatoes, broth and cumin in a small bowl. Pour over chicken.
    3. Cover; cook on low for 6 hours or on high for 3 hours until chicken is tender. Shred chicken and return to pot.
    4. Dish up and top with Garnishes.

  4. One really easy thing that I did was make fake Indian food. I know that you might not be up for spicy food, so this might be a buzz kill, but I just went to Target and got the Archer Farms bottle of Tikka Massala and I let it simmer in there until the cubed chicken was cooked. I served it over rice and it was pretty good and really easy.

  5. PS. I'm allergic to Garlic so all my recipies are garlicless. Most people would make the same thing with garlic. I usually just ignore the garlic when it's in a recipe. But if you like garlic add it. =)

  7. I got this fabulous recipe recently and I made it today. Both my kids LOVED it. River said it's his new favorite food. Thought I'd pass it on.

    Slow Cooker French Dip

    * 4 pounds sirloin tip roast (you can use rump roast)
    * 1 (10.5 oz) can beef consommé
    * 1 (10.5 oz) can condensed French onion soup
    * 1 can dark beer
    * 6 French Rolls
    * Mozarella or provolone cheese

    DIRECTIONS:
    1. Place meat in slow cooker. Add soups and beer.
    2. Cook on low for 7 hours.
    3. Slice meat ½ hour before serving and return to juice.
    4. Preheat oven to 350. Slice French Rolls and top with cheese. Bake for 10 min.
    5. Put meat on rolls and serve sauce for dipping.

  8. Yea, Im so siked for you, But I remember how dang sick you would get, so for that Im sorry! When are you due? Any hoo, Im such a crockpot girl, I have a ton of recipes I love to do, but one of my favs is chicken, salsa, taco seasoning and at the end put in sour cream and just put it over rice or use it for chicken taco's! Delish! Good luck girl!

  9. You should check out this blog- http://crockpot365.blogspot.com/ this gal has been using her crock pot every single day so far this year, so there are tons of cool recipes. I really like the simple formula for every day crock pot. take a cut of meat (frozen is ok) and place in crock pot with a jar of sauce(any kind- tomato, bbq, teriyaki, etc) and cook all day. serve over rice/mashed taters/noodles. you can add veggies (onions, etc) to crock pot if desired. Have fun!
